How do I stop concrete customers from canceling at the last minute?

Short answerTake a deposit before ordering material, set a written cutoff that matches your supplier's own cancellation deadline, and have the customer sign off on the pour date. Concrete is perishable once ordered, so a last-minute cancel can cost real material money, not just a slot on the calendar.

The explanation

Concrete is different from most services because the product has a clock on it. Once a truck is ordered, the supplier may charge for a cancelled or short-notice load. Your cancellation rule should echo that deadline: if the supplier needs notice by a certain hour, your customer needs to give notice before it.

Weather makes this messier. A rain delay is a reschedule, not a cancellation, and the rules should say so. Spell out who decides, usually the contractor, and make sure a weather move does not trigger a fee while a customer's change of mind does.

Get the pour date acknowledged in writing. A short message that restates the date, the area and the deposit, followed by a reply that says confirmed, gives you something to point to when a customer tries to back out the night before.
